3-501.19 Provide and follow written procedures for foods held using Time as a Public Health Control (TPHC). Clearly mark foods with begin and end times. All food not sold by the end of 4 hours shall be discarded. -P/Pf Observed pre cooked omelets and sausage holding in a steam well at the customer self service station without a beginning and end time. PIC stated that breakfast service starts at 6am and ends at 10am, employee is aware of start time. CDI- Start time placed on eggs and sausage during inspection, PIC discussed method of time marking in the future with EHS. |
