3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. -P Observed multiple cut chubs of meat out of date range in meat display. EHS found 6 varying types of turkey chubs with datemarks of 12/14, 12/18, and 12/22 in only one display case. CDI-PIC went through remaining cases during inspection and voluntarily discarded all items outside of the 7 day limit and instruction in the form of an acknowledgement of procedures will be signed by staff per PIC. |
