3-501.17B Commercially packaged Ready to Eat Time/Temperature Control Safety (TCS) food that has been prepared and packaged by a food establishment shall be clearly marked once the original container has been opened and held for more than 24 hrs- PF. Obesrved establishment had packaged cole slaw and dated cole slaw, but there was a few containers without a date, but PIC knew these containers without a date were packaged the same day as the labeled ones. CDI - allowed PIC to provide a date to the containers that needed ones. |
