3-501.19(B) (1) Follow written procedures for foods held using Time as a Public Health Control (TPHC) for 4 hours. Food shall have an initial temperature of 41 F when removed from cold holding temperature control or 135 F or greater when removed from hot holding temperature control. -P When EHS arrived on site the PIC was on a delivery. They did not have any time stamps for time on deliveries or on the food that they serve to the school. They are supposed to be using the white board and PIC explained this. The white board had fallen off the wall. PIC was writing a different food/time procedure for the food but not keeping track of the time stamps. EHS explained they do not need to write different procedures every day but different time stamps for the food. *Once food is off temperature control it must now be on time until served* VR REQUIRED 5/27/2022 |
