3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P REPEAT. Observed several TCS items above 41F in prep top unit, reach-in unit, and WIC #1. CDI - The chorizo patty and sliced ham in prep top unit were prepped this morning; items were voluntarily discarded. The raw shell eggs were over-stacked (51F on top and 41F on bottom); eggs above fill line were taken to WIC #2 for cooling. The half-n-half was taken out to make a drink and was left out for some time; item was taken to WIC #2 for cooling. Both outside and inside thermometers of WIC #1 were reading 50F. All WIC #1 TCS food items were voluntarily discarded, including bottles of tomato basil spread and mayonaise. PIC called maintenance and will not store food until repaired. VR to be done by 09/12/19. |
