3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. - Pf - Observed raw ground beef stored in a covered, large, deep, metal bowl cooling at an insufficient rate of .02F/min in the reach-in cooler. Do not cover items while actively cooling and use shallow pans. EHS strongly recommends designating space in the reach-in freezer for cooling purposes due to lack of walk-in cooler or blast chiller in facility. - CDI - PIC moved raw ground beef to reach-in freezer to quickly cool.
