3-501.19(B)(3) Follow written procedures for foods held using Time as a Public Health Control (TPHC) for 4 hours. Food shall be marked to indicate the time that is 4 hours past the point in time when the food is removed from temperature control. Pf EHS observed pizza slices being held on TPHC. Facility has TPHC procedures but were missing start and end times on slices, after further discussion with PIC it was determined that slices were just placed on TPHC prior to arrival and correct start and end times were placed on pizza slices. -0 Points |
