3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Egg rolls, general tso chicken, and crab rangoons observed cold holding above 41F. When questioned, manager reported during lunch rush these items are left on counter for convenience. CDI. Items had only been out less than 4 hours and were sent to walk-in cooler to rapidly cool. Items were also placed on existing TPHC procedures for future inspections. |
