31 0.50 Proper cooling methods used; adequate equipment for temperature control No No Yes 4-301.11 Provide equipment in number and capacity so that cooling, heating, and holding temperatures are achieved. -Pf Observed reach in parts of prep top coolers unable to maintain food at 41F or below during service. PIC stated that this morning the coolers were holding an air temp of 41F, but no food was checked. Walk in cooler, during service was blowing air at 44F. Most foods were 41F by end of inspection but some were at 42F. EHS and PIC discussed that possibly some preventative maintenance such as coil cleaning would help. Overall the air in the kitchen during service is hot and humid, making it difficult for coolers to maintain temperatures. PIC called a refrigeration company to come out. Items at 42F were placed on ice. PIC agreed to check the temperature of the walk in every hour and to monitor food temperatures while waiting for technician to come today. VERIFICATION REQUIRED
