General CommentsNo violation today due to cooling items properly per cooling rates observed. However, recommend changing slicing procedure to place meats on a shallow tray and do not over-stack. Once the pan is full with a thin layer of product, immediately place the tray in the walk in for cooling vs. waiting to slice the entire meat chub.
