For more information, please visit: https://health.mecknc.gov/envhealth/food-and-facilities-sanitation or view our training videos at the following weblinks: What are TCS Foods https://youtu.be/bRvqAETDjQU and Date Marking Food Safely https://youtu.be/BOPsSNUajYs .
33 0 Proper cooling methods used; adequate equipment for temperature control Yes No No 3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf Observed sliced tomato in front sandwhich station at 57 F that were prepared as the EHS walked into the door and placed covered in the reach in unit and at the sandwhich station. CDI. Product moved to walk in refrigeration for cooling and achieve a correct cooling rate by the end of the inspection, based on previous inspections determining that the reach in and sandwhich stations do not cool products quickly enough. Ensure staff transfer all products in need of cooling from the preparation area to the walk in refrigerator, currently the best location to cool is at the top/right shelf in the refrigerator. Recommend expanding cooling space in walk in to assist with the capacity to cool more items at once.
