3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf. Observed three quiches cooked yesterday without a date mark. CDI - PIV voluntarily discarded. Observed red curry sauce made with the addition of cream and butter. Sauce was in the reach in cooler where it had just been thawed and was dated for 4/16/2021. CDI - explained to PIC that date item is pulled from freezer should be added to label. PIC had pull date added. |

3-304.14 Wiping Cloths, Use Limitation - C. Observed four sanitizer buckets and two spray bottles of sanitizer all holding quat sanitizer at 0-50 ppm. CDI - PIC discovered that all these containers had just been refilled but the concentrate bucket was empty. PIC replaced the empty concentrate and remade all sanitize at proper strength of 200 ppm quat. |
