General CommentsDuring inspection EHS observed that the 2 door reach in cooler closet to the line was not holding temperature at 41F or below. The 3 door reach in cooler was also not holding temperatures of 41F or below. EHS and PIC waited to see if units were in defrost and if they would drop in temperature. EHS and PIC agreed that the units were not dropping fast enough and decided to remove all TCS items from these units. All items that were not cooling (fries and raw chicken prepped around 1:30 PM) were discarded. Those items that were cooling were moved to WIC. PIC moved all uncut, non-TCS produce to the units in disrepair as they do not need to be maintained at 41F or below. PIC stated that they felt confident that they could work out of the one functioning RIC and the WIC until the units can be repaired. EHS will return within 3 days to ensure that the units have been repaired. Facility should refrain from using these units until they are positive that they are working properly. EHS suggested a using a cold holding log to PIC. EHS advised PIC that if chicken does not reach 41F by 4:30 to discarded the items. EHS advised that if fries do not reach 41F by the end of the 6 hour cooling window then they should be discarded as well.
