3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed multiple items in prep top and raw beef container holding above 41F. CDI Items in prep top were holding above bc one container was missing from prep top letting ambient rise to above 41F. When prep top full, temp did not drop. PIC discarded TCS food holding above 41F. Equipment will be looked at and items will be kept on TPHC until repaired. Beef was placed back into WIC to re cool quickly. Salads moved to WIC to re cool properly, less than 4 hours since placement into prep unit. EHS suggested placing one pack and splitting so beef is not stacked high in the pan.
