Observed raw beef stored above raw seafood (shrimp) in walk-in cooler. Employee had recently placed item in cooler after prep. CDI-PIC rearranged food storage.

Observed raw animal proteins stored above dumplings in walk-in freezer. Facility places on sheet pans until frozen and then stores in separate food container in freezer. Ensure that after food is removed from original packaging and prepped that food is stored according to final cook temperature even in freezers. CDI-PIC rearranged items. |
