Cheese and sour cream were stacked above fill line of containers, likely responsible for the rise in temperature. Smoked salmon was thawed under running water, but likely rose in temperature due to water temperature in thawing process. CDI- all products were spread thin onto sheet trays, put into reach in cooler to rapidly cool to 41F or below. REPEAT.

Observed water leaking from the basement wall into area with walk in cooler and freezer. Water had leaked onto the floor of both the walk in cooler and freezer. PIC stated that this occurs after rain due to the age of the building. Facility has had the area sealed recently. EHS recommends having a contractor/specialist recheck and reseal the area as needed to prevent the water from coming into the restaurant. 6-501.12 Floors, walls, ceilings including the attachments such as soap, towel dispensers; light fixtures; and heat/ac vent covers shall be clean.
