3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf Observed cooked beef stew containers in reach-in cooler and reach-in freezer without date mark labels. EHS spoke with PIC and she dated all of the items Overall, date marking practices are very good. Please make sure that the prep/freeze date is subtracted from the overall 7-days when the product is thawed. Best practice will be to place at least two date mark labels on products when they are cooked and the day they are removed from the freezer to thaw so that 7-day hold period can be calculated. |
