3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. -P Observed several soft cheeses and cured meats with no date labels. PIC was unable to provide packaging or dates for cured meats, but knew when feta, goat, and brie cheeses were opened, and was allowed to date them accordingly. Since packaging could not be verified to say "Keep Refrigerated", cured meats were voluntarily discarded. |
