3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. -P Observed ranch and lettuce being date marked for 8 days; 1/28-2-4 and 1/29-2/5. CDI PIC changed labels to demonstrate for 7 days. PIC stated that the last day for date marking product would be kept till end of day. REPEAT Points not deducted due to separate issue from last time. If seen in next inspection points will be deducted.
*Informed PIC that if product is above 41 degrees can keep for only 4 days.* |
