3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf For more information please visit: http://meck.co/FoodSafety or view our training videos at the following weblinks: What are TCS Foods https://youtu.be/bRvqAETDjQU and Cooling Food Safely https://youtu.be/P6x8b1ZVOxU .
Observed chicken, shrimp, tempera batter on new ice bath from shift change. Food pans were sitting on top of ice which was not allowing food closer to top of container to cool down quickly from prep. CDI-Ice bath was filled with water to meet food line and food began to drop temperature quickly.
Observed wings in reach-in cooler above 41F. Bread is full and stacked in reach-in, restricting air flow and not allowing wings to cool quickly during open and close of reach-in door during busy service hours. CDI-PIC relocated some bread to allow more air flow in unit. Temperature of food dropped quickly. |
