2-103.11(A-P) PIC shall ensure rules in the code for food safety and handling are met. -Pf Observed manager without managerial control of the kitchen. Several violations were found and corrected by EHS during inspection. PIC did not know when items were made, when they were prepared or if employees had been checking temps. Violations for date marking, cold holding and hot holding were found.

Cooler turned down and temp was 41F.
