General CommentsFacility uses zip ties to secure bags filled with hot food. The bagged food is then cooled using an ice bath. Per NCDHHS and Food Code guidelines around reduced oxygen packaging, EHS advised PIC that the zip ties must be removed after cooling. Food shall be stored in an open bag with a lid for protection in the coolers. Zip ties will be placed on the cold food (less than 41F) immediately prior to reheating; food will be reheated in the kettle within 2 hours; and then immediately opened for service. During inspection, tall single door reach in cooler reached ambient air temperature above 41F. Items in cooler still at 41F when initially inspected, and later in the inspection went up to 45F in some areas. EHS advised PIC to relocate items to a different cooler for cooling and then cold holding. PIC will monitor cooler and have a technician come out to ensure defrost cycle is not too long and is occurring at correct time.
