33 0 Proper cooling methods used; adequate equipment for temperature control Yes No No 3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf -Observed steamed broccoli miss cooling parameters after cooling too slowly overnight. Observed broccoli at 45F, stored in deep pan and covered with lid. -CDI- PIC voluntarily discarded the broccoli. -Observed spicy tuna cooling in low reach-in cooler, after being prepped this morning. Low reach-in coolers are not efficient at cooling. Use small portions, uncovered shallow containers, within the WIC or freezer for efficient cooling. -CDI- Spicy tuna was still within its 4-hour cooling window, so PIC moved tuna to freezer for rapid cooling.
