General CommentsObserved facility test strips with expiration date of 08/20. Test strips properly displayed ppm concentration of dishwasher sanitation solution. EHS advises facility to make unexpired test strips available to best verify concentration of sanitizing solutions. Observed salmon roe removed from cold holding and placed at room sushi prep area for extended period of time (approximately 30 minutes). When temperature was taken, salmon roe was observed at a temperature of 59F. PIC elaborated that roe was removed from cold holding as need and placed open in sushi area RIC to cool. Facility intends to keep roe at 41F consistently. If establishment requires roe to be kept at room temperature for extended periods of time, it is recommended that facility utilizes TPHC for roe.
