3-501.16(A)(2) Maintain TCS foods in cold holding at 45F or less. -P Observed raw chicken holding above 45F on the bottom shelf in the reach-in cooler. Other items on higher shelves in reach-in are holding right at 45F. EHS advised PIC to call refrigeration maintenance to fix the cooler. PIC stated he believes the high temperature is due to air blockage because the cooler is overloaded with product. Cooler should be able to hold foods below 45F in all parts no matter how much is in the cooler. CDI: chicken was from last night and was voluntarily discarded. VERIFICATION REQUIRED to ensure cooler is holding foods below 45F. Observed foods holding right at 45F in walk-in cooler. EHS will also return to see that this cooler is working properly. PIC stated they had turned the cooler down due to the freezing of vegetables. |
