Unit is scheduled to be serviced tomorrow morning 5/17/22 and will not be used until repair. Facility will use lowboy unit for foods that were being stored in prep unit. Observed buttermilk used for chicken breading station on ice but temping 55F. Buttermilk was discarded and buttermilk will be kept on TPHC. TPHC form was filled out with PIC and discussed procedures. Verification required by 5/19/22.

Observed ham slices that were recently portioned, tightly wrapped in plastic bags, still above 41F in walk-in cooler. CDI-Discussed cooling methods of food prepped at room temperature with PIC. Food was vented.
