3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed lettuce, iceburg 50F, romaine 51F and shredded cheese 52F sitting on top of the ice in the ice well. Also noted iceburg lettuce 48F in the top of the prep cooler. CDI by removing the iceburg lettuce and putting it in the WIC. The romaine and cheese were nested in the ice to cover the sides of each 1/3 pan.
The items were also put on temporary time control for 4 hours. The lettuce in the prep cooler top was also put on a 4 hour time limit. It was suggested covering the lettuce when not busy, using pre-chilled pans during prep and ensuring lettuce is not left out too long. Since this is a new prep cooler and other items were 41F or below only half points were deducted on this repeat violation. 1.5 pts |
