3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed items in main prep top cooler including but not limited to pickled onions, tomatoes, cheese, Cole slaw, and pico all holding above 41F. CDI: Items returned to below 41F within 40min. When prep top lid was left closed after the lunch rush. EHS noted many items were overfilled. EHS and PIC discussed fill levels of containers and that metal should be used as much as possible. Additionally, lids can be added to items that are less popular/ not used as frequently. Observed tomatoes dated 6/20 in reach in above 41F. CDI: tomatoes voluntarily discarded. Observed items in walk in cooler above 41F. Cooler ambient air temp was 38F. PIC stated that they received a large delivery earlier and the door was left open for approximately 20 min. EHS noted that the stark temperature changes did not align with that alone. Through discussion, EHS and PIC determined that the routine defrost cycle occurred at this peak rush and delivery time, causing items to rise above 41F. CDI: PIC called their fridge tech who is scheduled to come this afternoon to adjust the defrost time and length. All items were coming back down to 41F during the inspection, and many bulk/dense did not exceed 41F initially. Observed fryer reach in cooler holding items above 41F near the bottom. Air flow was blocked by large pans. CDI: Items were iced and came down to 41F. Items rearranged to provide proper airflow. |

CDI: EHS explained to staff that if items need to be quick thawed during the summer, to be conscious of the fact that the cold water is well above 70F and that items should be thawed ahead of time under refrigeration if possible. Otherwise, pay close attention and take note that the warmer water will cause food to go above 41F much quicker. Food was iced to get it back to 41F quickly. |
