General Comments- Facility has a TPHC policy on site for portioned dressings (ranch and blue cheese) in the salad opentop. PIC stated the goal is to maintain all items at proper temperature. Dressings observed at 41F or below during today’s inspection. PIC informed that they must choose to use TPHC or cold holding as their method of storage at the prep cooler. New TPHC document provided at the time of the inspection for the PIC to fill out if they wish to use TPHC as the old one was post-covid and they have since changed what items they would possibly hold on TPHC.
