3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf OBSERVED cooked pork bbq, sausage links, and deli ham meat in the low boy without a date. All items were prepared yesterday. OBSERVED sliced cheese, pasta salad, potato salad, sliced tomatoes and shredded cheese in the flip top without a date. These items came from dated containers in the walk in cooler. CDI. Employee placed date on all items. |
