3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf Observed potato gnocchi stored in reach in freezer. Per conversation with the PIC, this TCS food item is prepared with non date mark exempt TCS foods (cooked potato), frozen, and transported from an associated food establishment (Luce) for further long term storage in establishment reach in freezer. Though the item can be held in freezer storage for an extended period of time (greater than 7 days), it is required to be date marked for the day of preparation and receiving. CDI - EHS requested date of reception from other establishment (08/04) and date marked food accordingly.
Note: all other non date mark exempt, TCS foods were observed as being properly date marked within the establishment. Facility date marking has improved considerably.
