3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed milk stored on serving line and in refrigerator that was above 41 F. PIC stated that milk in serving line will be reused for the next day. PIC also stated that opened container of milk was sitting on counter for a few minutes while delivery took place an hour ago. CDI- milk on serving line will be placed on TPHC. Milk in refrigerator was allowed to chill. |
