The thermometer must be readily accessible. -Pf Observed facility without a max/min thermometer for testing sanitizing temperature of rinse cycle of dish machine. PIC stated facility uses high temp test strips instead of thermometer but was unable to locate test strips. VERIFICATION REQUIRED within 10 days to ensure facility has test strips or a high temp thermometer. |
