3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P: sliced tomatoes, sliced cheese, shredded lettuce above 41.0 F in prep cooler top next to grill. Found chopped chicken in reach-in portion of same unit above 41.0 F. AM temperature charts showed items in compliance at opening. CDI- moved to walk-in to chill down and back up food brought out that was in compliant temperature. Refer to temperature charts.

Observed single service cup being stored near the cash register with protective plastic sleeves pulled all the way down to the counter, leaving cups exposed to consumer contamination. -CDI- PIC was educated and raised the plastic sleeves to cover the cups fully. |
