General CommentsThrough conversation with PIC about frequency of cleaning of the lone slicer in the facility, determined slicer is wiped down with sanitizer throughout the day, but only goes through the cleaning process (wash, rinse, sanitize) at the start and end of the day. Equipment such as slicers used for the processing of TCS foods must be cleaned at least every 4 hours. This includes breaking down the equipment, and processing at 3-compartment sink.
