General CommentsEHS observed Steak held on TPHC, with proper preparation, reheating, and labeling for disposal. PIC presented email displaying TPHC instructions for steak, as well as blank TPHC logs with instructions for ice bin lettuce, a process not observed at time of inspection but effectively described by PIC. Though digital instruction sheets are sufficient, EHS provided PIC with blank instruction sheet, to be filled out at the discretion of PIC; should electronic TPHC instruction not be readily available during an inspection, filled out hard copy will suffice for presentation of TPHC procedure.
