4-301.11 Provide equipment in number and capacity so that cooling, heating, and holding temperatures are achieved. -Pf Observed walk in cooler (only approved equipment for cooling of foods) with an air temp greater than 41F. CDI: PIC is cooling very small amounts of products in the reach in cooler. Proper cooling was seen during inspection today. Facility has cooling procedures in place regarding using shallow pans, frequent stirring, and only cooling one product at a time. Facility does not have proper cooling equipment with walk in cooler not working properly if volume increases. Future violations of cooling will result in the need to fix walk in cooler, provide other cooling equipment, or change the process by which food is produced (no cooking and cooling of TCS items). |
