PIC adjusted dispenser, believes there is a battery issue. PIC able to get dispenser working after a few minutes, soap dispenser appears to be having issue with sensor. CDI- soap provided, EHS suggested providing an additional pump soap at this handsink to ensure employees have soap if dispenser is malfunctioning. 5-205.11 (A) A handwashing sink shall be maintained so that it is accessible at all times for employee use Pf. 22 1.50 Proper cold holding temperatures Yes Yes No 3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed TCS foods holding above 41F at 2x prep units during inspection. EHS found that items at top portions of units were holding above 41F (see temp chart), while interior/reach in portions of units were holding all foods at 41F or below. PIC believes issue is process related, believes employees are leaving product out on rolling carts for too long while loading units with product in the morning. PIC stated process is to empty units at end of night, turn units on in the morning and load fresh each morning with product from walk in cooler. PIC believes employees are taking too long to load units, food is sitting at room temperature for short period of time before loaded into cold holding units, causing rise in temperatures. CDI- EHS instructed PIC to move all TCS foods above 41F to walk in cooler (had only been out of temp for max 2 hours), replace product at tops of units with backups in walk in cooler. EHS found that all TCS foods were holding at 41F or below for remainder of inspection after replaced with product from walk in. REPEAT.
