Observed lack of oversight throughout the kitchen as evidenced by improper hot and cold holding temperatures, improper date marking, and availability of stocked hand sinks. Manager is a certified food protection manager and has knowledge of food safety practices, however, this has not been well communicated to the staff. Manager is new to the store and is still implementing changes. Staff on site were educated today during inspection.
