4-601.11(A) Equipment food contact surfaces and utensils shall be clean to sight and touch. -Pf Observed slicer with dried food debris behind that blade. PIC said they only use it once or twice a week. CDI-PIC washed/rinsed/sanitized it whle EHS was on site.
4-602.11 Clean the equipment and utensils used with nonTCS foods as required to avoid contamination. Observed ice machine tray with black/pink build-up behind it. Ice chute needs to be cleaned. PIC said they used to have a serivce clean it but they are currently doing it themselves. |
