3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed liquid eggs in omlet station prep cooler reach in at 54 degrees. Also observed shell eggs in this cooler as cooler as air temp reading 49. PIC turned down cooler and gave cooler 30 min. to recover and observed no colder than 47. Have cooler serviced as needed. Liquid eggs and shell eggs that had been in cooler less than 4 hrs were moved to walk in cooler to chill to 41 or below. Will follow up that cooler is cold holding foods at 41 or below. |
