3-501.19 Provide and follow written procedures for foods held using Time as a Public Health Control (TPHC). Clearly mark foods with begin and end times. All food not sold by the end of 4 hours shall be discarded. -P/Pf Observed time being used for lettuce, tomatoes, cheese, and quesadillas. Lettuce had a time stamp of 9:37-EHS saw it was only 9:30, PIC explained product had been made around 9:00. PIC explained they had a time stamp for the big container below, anfd when they place it up top in the prep unit they put a new time stamp for that one. CDI-PIC was given the correct way to use time stamps-once product is prepped and placed out of temp control it needs a time stamp, or once food has been properly cooled to 41F then placed out of temperature control that's when time starts. Also time is being used for lettuce, PIC was not able to find that procedure, EHS added it on another TPHC form. REPEAT. |
