4-601.11(A) Equipment food contact surfaces and utensils shall be clean to sight and touch. -Pf. Observed multiple stacks of metal sheet pans that were sticky to touch and one that had food residue and one scoop that had food residue remaining on the inside section where the scoop rests. PIC stated that sheet pans need to be washed and turned around in 3 compartment sink to be washed. Ensure that all equipment can be submerged into 3 compartment sink or any a procedure to clean all equipment to sight and touch that may not fit completely into 3 compartment sink.
