22 1.50 Proper cold holding temperatures No No Yes 3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed TCS food items stored inside WIC 1 cold holding above 41F. Ambient air temp of WIC 1 was at 48F, and EHS noticed WIC door was left open, with employees constantly going in and out of the unit. Facility conducts equipment temperature checks and records temperatures digitally using tablets, but WIC 1 temperatures were not taken this morning. Ambient air temp dropped to 45F after 22 minutes. Another ambient air temp was taken at 11:30AM (over an hour from the first initial ambient air temp reading) after unit was blocked off from employee use, and WIC 1 was still temping 44F-47F (immediate spike in temperature when door is opened). EHS noticed ice buildup on fan inside the unit, and heavy condensation dripping from the fan. PIC entered a work order in for technicians to come out and check on the unit. All TCS food items from WIC 1 were moved into WIC 2, as WIC 2 has plenty of storage space to hold TCS food items. PICs stated they understand to keep raw chicken stored separated from all other TCS food items inside WIC 2. VERIFICATION REQUIRED within 3 days to ensure facility is in compliance.
