Use approved cooling methods to ensure foods cool quickly, from 135 to 70 in two hrs and 70-45 in 4 more hrs. Observed two deep containers of melted cheese cooling in walk in cooler at 100 degrees 1.5 hrs since cooling began. Unlikely cheese would reach 70 degreees in the next 30 minutes. Need to always use flat pans, quick chilling equipment, don't stack cooling pans, vent pans, use ice baths or othereffective methods.CDI- Cheese moved to shallow pans to reach 70 in the next 30 minutes. |
