3-304.14(B) Hold in-use wiping cloths in properly concentrated sanitizer between uses. - Observed the 3 sanitizer buckets throughout the kitchen to be testing at quaternary ammonia levels of <50ppm. The sanitizer bag at the sanitizer dispenser was observed to be almost out, resulting in air gaps in the line when filling the buckets and causing the sanitizer levels to be off.
CDI - All 3 buckets emptied and refilled with properly concentrated 200ppm quaternary ammonia solutions. |
