In reach in cooler observed: two containers of cole slaw from the 21st, and grilled chicken and tomatoes prepped yesterday. All these items were above 41F. Ambient air of reach in at the time was 49F and minutes later it went down to 43F. This reach in unit is opened consistently during the day to prepare dishes. CDI- Both containers of cole slaw were voluntarily discarded, chicken was placed in freezer to rapidly cool. Suggested to PIC to set reach in temperature to a lower temperature to keep foods at 41F and below.
In flip top observed containers of ranch and butter above 41F. CDI- For ranch suggested that facility hold these containers in ice and for the butter suggested not filling container up to the top with butter. Items were placed inside walk in cooler to rapidly cool.
Also found wings and mashed potatoes in main walk in cooler above 42F. CDI- Suggested to PIC to set unit temperature lower. |
