General comment 4-501.11 Maintain equipment in good repair. - Observed split gaskets on the right and middle door of the pizza prep unit. Replace gaskets. Observed saran wrap used to stop up the 3 compartment sink; replace with sink stoppers.
4-101.11 Food contact surfaces shall be made of safe materials. No odor, color or taste can migrate during multi-use. Materials shall be smooth, cleanable, durable and non absorbent. - Observed unsealed wood behind the pizza prep unit; seal/paint wood. |
