3-501.19 (A) (1) Written procedures for Time as a Public Health Control shall be prepared in advance, maintained in the establishment, and made available for the Health Department upon request. Written TPHC procedures must specify methods of compliance with 3-501.19 (B) or (C). -Pf. Observed facility is using 4 hour TPHC for cream held in lobby. Facility is follow Starbucks corporate policies, however, policies do not explicitly state that item must be discarded at the end of the 4 hour window. CDI- EHS provided TPHC procedures for PIC and assisted in completing them. Policy should stay onsite.
