CDI-labeled with date. Also observed ground beef cooked and in process of cooling with incorrect initial date of tomorrow. CDI-date corrected. |

3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf Observed ground beef cooling in walk in cooler next to the door and pan not fully vented. Place cooling items in colder part of walk and vent pan to ensure items is cooled rapidly. CDI-product vented and moved to corner of cooler. |
